Boil 6 cups of water and brew tea bags for 10 minutes.
For the thyme and peach-infused simple syrup, combine 1 cup of boiling water with sugar, thyme sprigs, ginger, peach slices, and lemon juice. Simmer until sugar is dissolved. Strain the syrup and discard the thyme, ginger, and peaches.
Combine cooled tea, simple syrup, STALK&BARREL Handcrafted Canadian Whisky, and bitters into a pitcher over ice.
Pour over ice and garnish with a peach slice and thyme.
